A specialty Japanese tea, Kokeicha is prepared from a fine green tea powder similar to Matcha. A special process whereby water is added to the tea powder, it is kneaded and then extruded through a machine (similar to making fresh pasta) and finally dried to result in a "pine needle" like form.
This tea is excellent for cooking... It keeps its shape in baked goods. Sprinkled on ice cream, it gives a crunchy texture... excellent with matcha based cooking... good with salt to make a matcha salt sprinkle on grilled fish or other meats (pork and chicken are especially good this way).
How to Prepare:
Use 2 teaspoons per 16 to 24 oz pot.
Use Warm to Hot (160º - 180ºF.) water.
Steep for 3 to 5 minutes.
